Does anyone have a good recipe? They are my new obsession. I want to make some this weekend but don't have a tried and true recipe. Of course you have to make the sauce to go with. My mouth is watering just thinking of them. It's turned my spinach salad I had for lunch into something very depressing.

I don't have a recipe, but they've been on my "need recipe" list forever. I loooooove them. Hopefully somebody else comes through...
With all these ladies there has to be a good recipe out there. I don't think they are too hard to make but I'd rather not just randomly choose a recipe online. Maybe Pinterest can help us!

I feel like the sauce would be the tricky part. The rolls themselves don't seem to have a lot of ingredients. The wrapper, and then mine have shrimp/tofu, lettuce, rice noodles, and basil...maybe some shredded carrots?
That one looks good, but the sauce that I think Poppy means (or at least the one I am thinking of) is like a liquid vinegar/sweet sauce with little crushed peanuts in it.
1/2 tsp mustard powder (or hot mustard, whatever you have around)
1 to 2 tsp Siracha
1/2 tsp ground ginger
Directions:
Heat the oil in a wok/pan. Saute the ground chicken breast.
While the meat is cooking, whisk the stir-fry sauce together.
Once the chicken is cooked, saute the garlic, water chestnuts and carrots until they are tender (just shove the chicken over to the other half of the pan).
Once the veggies are tender, mix the chicken, veggies and stir fry sauce. Cook until the sauce has reduced far enough that you won't have drippy rolls.
Set the chicken mixture aside to cool.
Whisk the dipping sauce together in a bowl, set aside until you're ready to eat.
I usually chop the veggies for stuffing the wrappers while the chicken is cooling. Assemble all the ingredients you'll need to put the wrappers together.
Follow the directions for the rice wrappers - usually you dunk them in warm water, set them on a flat surface, put the filling inside and then roll them up with the ends tucked in --> see PIP
So stuff your wrappers with the chicken mixture and chopped veggies and roll them up! This takes a bit of practice, but the ugly ones still taste good.
Once they are wrapped they are ready to eat - dunk them in the sauce!

Some have mint as well!
