I meal plan each week and grocery shop according to that plan, but I can never think of anything to make for lunch. I mean, we always have bread, pb&j, ham and mayo, etc. But what else is there besides macaroni and cheese? (Which I also always have.)
It doesn't necessarily have to be quick or easy, but something that doesn't break the budget would be awesome. (So, you know, no seared salmon on a bed of couscous and caviar or anything.)
Also, if it's something DH and I would eat, I shall award you full points.

Homemade chicken salad
Mexican pizza--put oven on broil. Put extra virgin olive oil on the outside of two soft corn tortillas. Add leftover meat if you have any on hand/black and or refried beans/veggies/cheese/hot sauce to the middle. When one side turns golden brown flip and cook the other.
Brown rice and black or pink beans--clearly I have a bean obsession. Lol
Quinoa and leftover meat
Buffalo chicken salad--leftover chicken mixed in buffalo sauce with romaine, shredded parm cheese, onions and blue cheese dressing.
Spinach salad with cranberries, toasted almond, red onion, chicken with balsamic vinegar and extra virgin olive oil
I also struggle with lunch. DS usually has a grilled cheese, cheese cubes and apple or pita with hummus. I often just have crackers, cheese and pickles.
One thing I've been doing lately that we both eat is mini pizzas on a pita. I keep a bottle of pizza sauce in the fridge and just put some sauce and shredded mozzarella on a pita and pop it in the toaster oven.
Another thing I like is devilled eggs (or even just hard-boiled eggs) or a BLT sandwich. Yesterday I made pancakes for lunch.
