I halved it and skipped on the brown sugar. Pulled the chicken, then put it back in the sauce and served on fresh baguette. It was awesome.
The other recipe was for stir fry chicken (just browed the chicken in vegetable oil) with a sauce made of sweet tai chilli sauce, low sodium soy sauce, and lime juice. It's sooooo good.

@mufflerlove I have to try that!! I was just worried I would leave too much water in the cauliflower and it would be crumbly or something! Was it idiot proof enough? Ha ha!
@ No longer the best My sister used a half of roll of paper towel and got so much water. At least with paper towel you can see the water coming out. I used a tea towel and I felt like I didn't get enough out but proceeded anyways and it was fine lol I have read some people do it without pre cooking the cauliflower to avoid this problem so I plan to try that next.
@xBlueFrogx We tried cauliflower mashed with one potato. We mashed the cauliflower first and it seemed to be a really strange texture. Do you have a recipe you like? I have read about sour cream, cream cheese or milk.
