Sweet potatoes/squash, but I don't really think of those as "true" vegetables because they're not green, haha. His favorite green vegetable is asparagus, and he loves it!

I haven't tried Kale yet. Does it taste like any other vegetable?
Probably most similar to collard greens if you cook it. It's pretty bitter if you eat it raw, but I made a decent kale salad last night with craisins, walnuts, and a lemon juice/olive oil dressing.

Exactly! I make a watermelon salad with watermelon chunks, kale, kalmata olives, olive oil, & white wine. It's delish.
He loves asparagus, broccoli and sweet potatoes.
How do you make the Brussel sprouts @ClandestineX? Steam, boil or sauté? Also do you cut them into smaller pieces?
If they are fresh, you can steam them for a while. I grew up on them boiled and to me, steaming tastes only just a little better. When I am being extra lazy I buy them in the steam bags you get in the frozen aisle and throw it in the microwave.
I give him chunks of it the size of his thumb still, maybe a tiny bit bigger. He loves the inside (yellowish part) more than the green outside.
