I boil my chicken with bullion cubes. Shred it. And then add in celery, boiled egg, a little pickled relish sometimes, mayo, salt and pepper.
Depending on what I have in the kitchen and what I have a taste for I may also add/sub a tsp curry, halved seedless grapes (Dh likes them in the salad. I like them on the side), craisins (Yumm!), and that's all I can think of at the moment.
Chopped chicken, halved grapes, celery, green onion, half yogurt and half mayo mixed with curry powder. Toasted almonds or cashews on top. That's my favorite chicken salad. I also like a version with tarragon instead of curry and craisins instead of grapes.

That sounds delish! It's similar to the recipe I use....though no green onion and I use pecans instead of almonds/cashews. Curry powder is a good idea....
Our family is crazy about a B.E.L.T.C.H. Bacon, runny egg, lettuce, tomato, cheddar and ham on sourdough bread. It's just as good without the cheese. I usually have hashbrown waffles and a fruit salad with it.
That also sounds really good....and LOL at the name!
I'm late on this but yesterday I had friends over and made a big pot of turkey chili. We had whole wheat pita bread on the side, salad and some cut up pineapple. Easy, filling and yummy!
