I should probably be eating salad, or chicken or something, but somehow, there ended up being a batch of brownies that magically mixed themselves together that currently reside in my oven.
Have the 1 hour glucose test tomorrow else there would have been something actually sweet added to this at the end: burger on a bed of sautéed mushrooms, with bacon, guac, and purple sweet potatoes cooked in coconut oil (mmmm) with some home made "special sauce". Then my "skinny cocoa" of unsweetened almond milk, unsweetened cocoa, and liquid stevia. Still not the same as the GF brownie batter mocking me in my fridge...
I've just finished three days of carb loading and eating a ton of food to make the listed diet. Today I had two cheese enchiladas for lunch (just the enchiladas) and a bean and rice soft taco made out of the leftover sides for dinner. And I think thats all I'm going to eat today. It feels so nice to only have to eat enough to make the hunger go away instead of stuffing myself for the sake of a "diet"

we had csirke paprikos (Hungarian style paprika chicken) with egg noodles and sour cream. i did force myself to eat some rabbit food before i decimated the lemon cookie supply.
I really wanted cake, but I'm out of cake mix, don't have a go-to scratch recipe, and was too lazy to go to the store. Brownies for the win!
If it's chocolate cake you're looking for, the Hershey's Cocoa recipe is awesome ... I use just about a quarter cup more flour and the dark chocolate cocoa. It smells so amazing and is super dense/moist and delicious!
I am currently eating a Dove solid chocolate heart that my nephews got me for Valentines Day. It's supposed to be 3 servings, but I anticipate eating it all right now. And I'm only feeling slightly shamed about that.
So in celebration of passing my 1 hour glucose screen we are baking gluten free chocolate chunk cookies and I bought some cream cheese frosting from whole foods in a tub so yeah thinkin 1:10 cookie to icing ratio.

DH is working late so instead of cooking I had corn dogs and chips. I might also be currently working on a sleeve of thin mints.
I would judge you if your DH-is-working-late-meal WASN'T something like corn dogs and chips. My go-to for such situations is usually an entire DiGiorno's pizza. Haha
