STMs+ - Easy toddler meals for after LO is born

So, it seems like most of us with other kids are starting to feel a little stressed about bringing home a new baby.. at least I am! I was on Pinterest this morning, and came across a good idea. Even with all this talk about freezing meals in advance, it never occurred to me to freeze toddler-friendly meals in single serve portions. So I found a few good ideas of things that I can make in advance and have ready for the days when I don't have the time or energy to make a meal (Mac + cheese, spaghetti, mini meat loaf, French toast, etc). Does anyone else have any good, easy, toddler-friendly recipes to share?

  • My son is 2.5 and pretty much eats what we eat. For those meals that are too spicy for him, we have some food from Trader Joes in the freezer. Little pizzas, chicken nuggets, fish sticks, etc

  • All of my toddler's meals are easy ;). Pasta, Mac and cheese, pb&j, etc. feeding her after baby is here is not high on my worry list!

  • My son LOVES those French toast bites, and used that website for a lot of DSs lunch ideas. But for quick easy things I would do chicken strips/nuggets, grilled cheese, Mac and cheese, fruits, sneak some veggies in some how, pb&j sandwiches. I have a dwindling stock of homemade spaghetti o's and spinach Mac and cheese (both recipes on once a month meals website)

  • Just discovered my little guy loves lunchables not the best but in a pinch its going to be our go to also he loves pancakes so we are going to get the mini cakes I can nuke in a hurry

  • Mine is all for fresh fruits and veggies. All I do for lunch most days is rinse a bunch and arrange on her plate all pretty like. Bam, happy kid.

  • Mine loves a lot of the simple meals mentioned plus plain cheese quesadillas...relatively easy to make. Sometimes it's just likehe's snacking all day, but if he eats enough I'm fine with it. He likes to snack on bananas, applesauce, string cheese, sometimes I'll let him have some of my zone or cliff bar, watermelon, broccoli, crackers with peanut butter, yogurt, etc.
  • I did some make ahead meals with DD... but I'm trying to stop using plastic so much... so I don't use ziplock baggies.
    I will fill up some of the glass jars I have to freeze, but I don't have enough space or jars to make too much.  DD eats lots of fruit, toast, quesadillas, hummus, french toast, etc... and most of that is easy to make.  We will also eat lots of leftovers.  I may do some mini meatloafs or something in  muffin tins to freeze... and possibly some soups/mac and cheese or something.  I make homemade tortillas and they don't take up too much room... so a tortilla with some leftover chicken or beef works nicely as well as a quick meal.

  • Boxes of crackers, lunch meat, cheese and fruits or veges and I've got a happy kid. She eats pretty muh anything. I think my only prep for food for her is moving some things in the panty and creating a grab box for her to get her own food out. She gets her own now with a chair, heck by May it can probably get to a point she makes me lunch too (of the above stuff).

  • Thanks for the ideas, everyone. Right now I feel like we are stuck in a food rut of mac + cheese, chicken nuggets, and lunch meat because it's easy and fast. Plus we are in a picky toddler phase, so I don't want to spend too much time making things that she won't eat! I'm working on her just eating what DH and I eat, but she is not big into different spices and sauces, but we'll just keep trying..

  • DS is 1 and pretty much eats whatever we do so I won't be doing anything special just for meals for him. But he is an awesome eater and will eat whatever I plop in front of him most days.

  • Mine pretty much eats what we eat. I also do a lot of little pieces of raw fruits and veggies and throw in some sort of protien (eggs, pb, chx).
    Another thing that usually goes over well is mini muffin tin recipes like fritattas or chicken pot pie muffins where everything is in one little bite sized muffin. I bet those would freeze well too.
