So, it seems like most of us with other kids are starting to feel a little stressed about bringing home a new baby.. at least I am! I was on Pinterest this morning, and came across a good idea. Even with all this talk about freezing meals in advance, it never occurred to me to freeze toddler-friendly meals in single serve portions. So I found a few good ideas of things that I can make in advance and have ready for the days when I don't have the time or energy to make a meal (Mac + cheese, spaghetti, mini meat loaf, French toast, etc). Does anyone else have any good, easy, toddler-friendly recipes to share?

I will fill up some of the glass jars I have to freeze, but I don't have enough space or jars to make too much. DD eats lots of fruit, toast, quesadillas, hummus, french toast, etc... and most of that is easy to make. We will also eat lots of leftovers. I may do some mini meatloafs or something in muffin tins to freeze... and possibly some soups/mac and cheese or something. I make homemade tortillas and they don't take up too much room... so a tortilla with some leftover chicken or beef works nicely as well as a quick meal.
Another thing that usually goes over well is mini muffin tin recipes like fritattas or chicken pot pie muffins where everything is in one little bite sized muffin. I bet those would freeze well too.
