AW: I made delicious cookies that have veggies in them!!! PIP

So I've been creating recipes lately to hide as many veggies as I can and yesterday I was making sugar cookies and I added spinach. (a lot of spinach!). They are so freaking good I can't believe it. My H loves them and of course Ava does too but she loves anything in a cookie form. I also made them with coconut oil which was a win as well! So they are dairy free too. I seriously need to stop eating them though...

Anyway, the recipe is on my blog if you're interested (it was super easy to make them) and a bunch of other recipes I've made for Ava (and us) are up there too :) (link is below in my siggie)

  • I have to say cookies with veggies don't sound appetizing, but spinach muffins were surprisingly good so I may give these a try! And all the other hidden veggie recipes sound great too. Thanks for sharing.

  • Could I use olive oil in place of coconut oil? We are a dairy free household and I'd love to make these today but I don't have coconut oil or agave syrup; can you suggest substitutes? Thanks!

    I've never used olive oil in cookies but you could try. Maybe just half the recipe and see what happens. I don't see why it wouldn't work :)
    Let me know what happens if you do make them! Oh and for the agave, you can substitute regular sugar.
  • Zyas- I may try it; my DH uses olive oil when he makes choc. chip cookies so maybe it'll work. I'll let you know :)

    Coconut oil works well in baking because it is solid at room temperature. I t's a great butter substitute.  So the texture might not be the same with olive oil.  Also, coconut oil has a slightly sweet taste which is nice in baking.  ...but if you try it with olive oil, let us know how it turns out.

    I've heard you can use avocado in place of butter in recipes, but I've never tried that.  

    Apple sauce can also be used instead of oil in many baking recipes.

  • APendola- I have avocado's in the house; maybe I should use those instead of olive oil? We haven't bought coconut oil in awhile bc of the price. DH does most of the cooking and he makes do with olive oil.
