I usually just shred the beef after it has cooked all day ( small amount of water and grill seasoning over the meat), add back to the crockpot with a small amount of the remaining liquid then add bbq sauce. Serve on buns. My mother scarred me from ever eating roast with cooked potatoes/carrots/ect. We had that all the time when I was a kid and it never tasted good! Sometimes I will reserve part of the meat and add onions/peppers/chili powder to make meat for fajitas or nachos.
