What's for dinner?

What is everyone making? I am making lasagna with garlic bread and maybe something else I haven't thought of yet. lol. Also, does anyone have a good recipe for some sort of casserole? I need to make a new one.

  • Riley's having leftover scrambled eggs with ham, corn and blueberries. I'm having leftover sweet and sour beef from the crock pot on a biscuit. We've been doing lots of quick, easy stuff here lately!!

    No suggestions right now on a casserole, but have you checked out the six sisters website for ideas? https://www.sixsistersstuff.com/ I've found lots of delicious and easy stuff there, plus they have freezer meals and casseroles there too. GL!

    We go every Monday night (almost) because its $5 night.  I really love their bowls, and Lillian will eat her weight in beans and drink the salsa.  She eats other stuff there too but those are her favorite parts, haha.


    There is one about 15 min away from me. I am going to have to check it out.

    Its from the ultra cool 24 Day Challenge cookbook ;)  Its crockpot: chicken, low sodium taco seasoning, no sugar tomato sauce, salsa, chili powder, cumin, garlic then just shred it over the salad (add black beans, avocado, black olives) and make the dressing: olive oil, taco seasoning, lemon and lime juices :)

  • We had ranch chicken parm, baked potatoes, peas and lima beans.  J had hot dog, mac n cheese, and peas.  This kids is so darn picky.  Drives me insane.

  • Late to the game, but last night we had cheddar almond chicken with roasted broccoli and cauliflower. Tonight I think we'll do lettuce wrapped bison burgers and sweet potato fries.

  • @emilypc, I didn't really use one!  Just kind of made it up.  It was delish though!  I'll attempt to write out my "recipe"...

    I used some pretty big chicken breasts.  Sliced them open from the side (so they opened like a book) and put a couple of thin slices of sharp cheddar inside.  Then, pinching them closed, dipped them first in a bowl with an egg and a splash of milk, then into a second bowl full of about 2/3 almond meal, 1/3 finely shredded sharp cheddar, and whatever spices you want.  (I used sea salt and creole).  Coat on both sides, then put on a cookie sheet lined with foil and sprayed with whatever you use for non-stick.  They were done in about 25 min at 400*.

    On the shelf below that I roasted the veg at the same time.  Just toss the broccoli and cauliflower on another foil lined cookie sheet with a good amount of olive oil, garlic, and again whatever other seasonings you want.  I used a bit of onion powder, black pepper and sea salt.  Lay another piece of foil over the top for about 10 min, remove and gently toss again, put it back covered for 10 more, remove and toss, put back for 5 uncovered.  Roasted veggies are super easy and our favorite!!!  Love with carrots added too, we just didn't have any.
