Ok here is the recipe for the lightened up ham and scallop potatoes.
4 cups thinly sliced potatoes
1.5 c cubed ham
3 tbsp grated Parmesan
3 tbsp butter
3 tbsp flour
1/2 small cooking onion chopped
1.5 c 1% milk
1/4 tsp nutmeg
Salt & pepper to taste
1.5 c shredded 2% sharp cheddar (I use Cabot)
Melt butter in pan over medium. Add onions and cook until butter is slightly browned, add in 3 tbsp flour with wisk. Once combined and smooth, stir in milk and bring to simmer. Let mixture thicken slightly then add nutmeg, salt and pepper. Add in cheese and remove from heat once totally melted and combined.
In a 9x13 glass pan, put down a thin layer of potatoes and ham. Pour some of the cheese mixture over top and spread with spatula. Cover with the next layer of ham and potatoes and spread the remaining cheese sauce on tip with the spatula. Sprinkle with the Parmesan and cook uncovered at 350 for 1 hour. 378 calories for 1 cup
