Crockpot. If the meat isn't frozen I can usually put it together while Colby is napping and have it be ready for dinner. I do chicken fajitas, stuffed peppers, chicken parm, meatballs, BBQ chicken, pork ribs, pork chops etc. I do at least 1 crockpot meal a week. I like meals that I can put together while Colby is napping.
I don't have my meals planned for the week yet, but I did make a new easy dish this week that I'd recommend! Taco stuffed shells. It was easy and delicious. Also it only calls for half the box of shells and half a bar of cream cheese, so is recommend doubling it and freezing the other half.
I cooked a whole chicken this weekend and shredded it for this weeks meals. Chicken enchiladas that I will premake and pop in the oven, chicken salad, Bbq chicken pizza and some chicken pockets for lunches.
