I already posted this recipe on the Monday meal-planning thread, but it's so good... I used a slotted spoon to scoop out some beans and red pepper for Rhys. (I don't do the blender, just mash it up some with a pastry blender, so there are lots of chunks for him to eat.
I also made taco salad and gave some to Rhys. Just a pound of ground beef with taco seasoning (I make it myself to cut back on salt). Serve over lettuce with corn, black beans ,pico de gallo, sour cream, etc. Rhys can't really eat the lettuce but I gave him everything else. I have made similar salads with shredded chicken, too.
I usually keep a pack of Buitoni tortellini or ravioli on hand as well... he really likes it and it's easy to boil some for him if I don't have leftovers to send.

Nov siggy challenge: animals eating Thanksgiving food
I should call this pantry soup, but it's tortellini soup.
I sautéed 2 cloves of chopped garlic in some olive oil until fragrant (maybe a minute)
Add 8 cups chicken stock and 2 cups water. 15 oz can of cannellini beans (drained and rinsed) and 1 can of diced tomatoes. I bring that to a boil then add 1lb bag of frozen tortellini. I let that simmer for 10 minutes (cooking time on bag of tortellini) then add a bunch of chopped escarole. Cook until escarole is wilted (about 2 more minutes). Serve with crusty bread.
I pick all the goodies out and cut them up a little more for DD and she feeds herself. it's easy and yummy on a cold day.
I made beef stew and N loved it. The beef was tender so it was easy for him to eat. He also loved the veggies - carrots etc in the stew. Should be easy since you have a crockpot.
