WFD (What's for dinner)

Okay ladies. Let's hear it. What's everyone having for dinner on this cold day?

We are planning on salmon with greens and brown rice. Yum!

Re: WFD (What's for dinner)

  • I'm feeling really lazy, so we're having taco salads. I'm telling myself it's semi-healthy because of the whole grain shells and lettuce, but really, i'm exhausted and don't feel like cooking!

  • Braised lamb shanks from Costco!
  • I'm doing chicken breasts. I'm going to butterfly them and put a bit of cream cheese in and then top with this really delicious (and hot) green salsa that H and I discovered at the store. It's delicious. We'll probably have a baked sweet potato with it. I'm tempted to do pasta, though.

  • Fajita ckn has been cooking in the crockpot all day.
  • Ugh, good question. DH and I both have night time work stuff today so probably leftover lentil and sweet potato soup from last night and whatever else we can forage. I currently feel like eating a loaf of sourdough bread and nothing else.

  • Wow, you ladies must have a lot more energy than me! Either my husband has made dinner or I microwave a freezer meal lately.

It's still early on for me but give me a couple of weeks and I'm sure it'll be the same at our house

  • BLT Wraps. My friend made them for the super bowl and I haven't been able to get enough since! It's just lettuce (I use spinach so they're healthier), sun dried tomatoes, bacon, mayo and roll it up in a tortilla. The sun dried tomatoes add a really nice flavor to them... it almost tastes like there is a special dressing on them.
    Enjoy your yummy dinners ladies!

  • Baked chicken sausages with potatoes and carrots au gratin. It was great!

Chicken Taco Soup is totally my lazy day dinner!  Just throw a couple of chicken breasts, 2 packets of Taco Seasoning, 6 cans of Rotel, a can of black beans (or 2), and some frozen corn.  Cook it on high for 6 hours and you're good to go!  No fuss, no problem.  The chicken cooks enough that just before I dish it up it pulls apart with a fork.  The guacamole is just an avocado, some fresh store bought pico de gallo (Safeway), tabasco, lime juice and mix.
