Ok so I can't remember what I did last time around. Roasted beets for purées- skin on or peeled? I have these small beets whose skin has been cleaned and scrubbed before I roasted and I think will just blend into the purée after roasted but couldn't remember if there was a reason I should skin them. Like the skin is harder to digest or something? Any beet expertise welcomed. I eat them with the skin and love them but trying to make a batch for my baby without eating it first this time!
