we use pretty awesome bibs from ikea that have sleeves
if it is something that is particularly messy or stains badly, I will feed in just a diaper
I also have become a bit of an expert in stain removal and try and treat the stains immediately-- my proudest accomplishments in stain removal include raspberry and spinach
DD kept taking off her bibs when my mom was trying to feed her (she watches her during the week) and so we found some bibs that slip over their heads and don't have velcro or snaps...she hasn't figured out how to get that off yet.
We have been using long-sleeve smocks since DS was about 7 months. We have tried 3 different brands, and I will rank them like this:
1) bumpkins
2) kushies
3) IKEA
The IKEA ones are really huge - still a bit too big and long in the sleeves with my 15 month old. And it smells moldy despite being cleaned after each meal and washed in washer every few days.

A really cheap solution to protect clothes from messy foods; pick up a cheap oversized t-shirt to slip over whatever they are wearing. DD wears 18-24 months we have a couple 3T t-shirts we put on her while she eats and it keeps her other clothes nice and clean.
I use a bib with sleeves or I strip her down to her diaper. I always strip her down if I'm going to let her eat something really messy or something that might stain.
Here is an example of a bib with sleeves. They work pretty well.
