I always make cookies or do baking ahead of time. Are you planning on making a lot? They would be fine if you do them tonight...My baking was done as of Sunday and already delivered to everyone who is getting some!
Well, I am making a ton of decorated sugar cookies, caramel corn, apple crisp and I also have to make a huge batch of mashed potatoes all for xmas day.

You can definitely make the sugar cookies tonight. You could probably make and bake the apple crisp, then just reheat it in the oven on Christmas. I have no idea about the caramel corn, but I'm sure it would be fine to do it tomorrow. Just don't peel your potatoes in advance, or they will turn black...that would be the only thing I would say you should do the actual day of.
I did two baking sessions: one yesterday (or was it the day before?) and one last weekend. We needed them done so DH could give out cookie tins to some of his coworkers, and there are enough left over for us to leave some out for Santa and have some out for family when they come over for Christmas Eve and Christmas dinner.
