My parents are getting us the Davinci Kalani Mini Crib.
Davinci makes 2 mattresses for mini cribs: Crescent mini crib universal fit waterproof 50 coil mattress and Sunshine mini crib universal fit waterproof 3 inch mattress.
The only differences are the Crescent is 6" deep with coils while the Sunshine is 3" deep with foam (no coils).
Thoughts on which might be better? Or which might be easier to find sheets for?
We have a mini crib and use the coil mattress. It's still really light. We used one with DD and bought the same one for DS.
We use regular mini crib sheets; they're definitely on there really tight.
@egsquared , Where did you find regular mini crib sheets? I haven't seen them online or in stores.
I would recommend the Crescent mattress, which is what we have. It is more like a regular crib mattress, yet very easy to lift out to change bedding.
As for bedding, there doesn't seem to be a lot of bedding options, but I found the Gerber knit regular crib sheets to be a great fit. Wash them first and they shrink to just the right size. We added a breathable bumper (Amazon) and a mobile and called it a day.

@kalmte214 ,With DD we bought a couple cute sheets and a crib skirt from here - https://www.babybedding.com/portable-crib-bedding?p=all
Then we just got a couple solid colored sheets from BRU like these (they call them portacrib sheets) -
