I got my sister's recipe for the oatmeal muffins. I made up a pan of walnut and a pan of blueberry for Husband and Girl. I had to try one, obviously. Well. She took one bite and that was it. She climbed into my lap and shoved my hands out of the way. Looks like this was a good idea! LOL

1 1/4 C quick oats
1/4 cup agave or honey
2tbsp coconut oil (melted) or any other type of oil you like
1 tsp vanilla extract
1/4 C flour or pulverized oats
1/2 tsp baking soda
1/4 tsp salt
1 egg
1 cup mashed banana (2-3)
1/2 c shredded coconut
350 degree oven - 8x8 pan (sprayed with a little canola oil spray or whatever you use)
combine oats, honey, oil and vanilla
in another bowl combine flour, baking soda and salt
(back to the 1st bowl) add egg, mashed banana, vanilla, coconut and stir
Put the flour mixture in and stir until combined.
Pour into the pan and spread evenly.
bake 25-30 mins.
I cut these into 8 bars. they are simple, healthy and filling for me and the kiddo
