Cooking and recipes (questions)

So one my New Years resolutions was to cook more often and try new recipes. Which leads me to these two questions: 1) what is your favorite way to prepare asparagus? Do you prepare it any differently for baby? 2) how do you organize your recipes? TIA!

  • I don't use a lot of recipes so I'm no help there-- I like to make stuff up as I go along, but I do have a very very large Pinterest board titled "d'lish!" that I pin stuff to for inspiration all the time.

    Asparagus - I like to toss it with a little EVOO, salt and pepper and garlic, and lemon zest and then roast at 425 for about 10 minutes.

    Or, I actually have a specific asparagus steamer (A GIFT -- I didn't buy this), from C&B that is great because you can stand the asparagus up in it and then pull out the basket to drain.  

    Blanching it is also really good.

  • We like to grill our asparagus. Toss it with EVOO and salt and pepper then grill it...yum! I find and use a lot of recipes online.

  • I like to roast with EVOO too. Usually just with salt and pepper. I haven't made any for A yet.
    I have a 3inch binder with page protectors and I use post it notes for tab dividers. The tabs are breakfast, appetizers, salad, sides, crockpot, dinners, 9x13, soup, & the yummy stuff!
    But only recipies that I have made and I will make again go in the binder. For recipies that I'm thinking of trying they go in a magazine holder. Until I make them and decide to keep or not.
    I also write a note as to any changes I made or if I needed to make any for next time.
    I also have my thanksgiving oven timing chart on the back of the binder.

  • I like plain old steaming for asparagus, then for LO I just cut the spears in half and give him the tops.  My recipes are a cluster of note cards, pages printed online and stuffed into my bread box...I do not recommend this approach!

  • We cooked it plain - steamed. No fuss. We serve it to him in about 3-inch slices so he can hold onto it and take bites. I definitely over-cook it so it is super soft and mushy for him. Personally I think it's gross that way but he seems to enjoy it!

  • I broil asparagus... fast and easy. Wash the asparagus/snap off the ends and put on cookie sheet while the broiler preheats. Toss in a little olive oil. Put it under the broiler.. Check every few minutes and toss it around. Cook until it reaches your desired doneness. If you like it pretty crisp, it only takes a few minutes. I like to cook mine until it starts to get almost crunchy, so that takes longer... mmmm. Then I pull out a few pieces for Rhys and put lots of freshly ground salt and pepper on the rest for Ross and me. Yum!

    This exactly. Sometimes if I have a lemon laying around I'll put a little lemon zest over top of ours as well.

    @cmcmillan0901 It's a Rachael Ray thing. Which is why I refuse to ever say it... because she's annoying.
    Agreed that she's the most annoying thing ever.  I only type EVOO -- never say it -- my big RR pet peeve is that she says "EVOO, that's short for Extra Virgin Olive Oil!" EVERY SINGLE TIME.  So I don't know why she bothers abbreviating it in the first place.

  • I glad others think she is super annoying. Don't even get me started on how she says "Sammie" instead of "sandwich".
