How's this for starting the new year off right? I have a business trip so will be MIA for dinner today and tomorrow. DH has an appointment late Wednesday so plans to just bring home dinner that night. The rest of the week, we decided to make tacos and just wing it. Lol. So much for any pretend "we are going to eat a more balanced diet this year" resolutions. Oy. Maybe next week?
Leftovers tonight, and then I had nothing planned because DH was supposed to be away all week. I don't really eat much dinner when he's gone - cheese and crackers, toast, etc.
His flight out got cancelled, and he can't find another one. So now he's home all week. Oh well. We'll figure something out... but we're on a strict NO TAKEOUT "diet" after overindulging (money and calorie-wise) over the holidays.
Monday--quesadillas or something easy since I am working and DH doesn't cook Tuesday--Chicken tenders, rice pilaf, broccoli Weds--Chili Thurs--pizza, salad, fruit Fri--BFD, maybe some kind of breakfast casserole Sat--Pulled pork sliders, fries, slaw
I'm stoked that I planned my meals for the rest of the month, and we're going to be trying some new recipes each week
I just saw a menu board kind of like this at a family member's house over the holidays and am going to make one for myself too. It stores all of the menu and recipes/shopping list (on the back) in a little box and then you choose your menu for the week. I think it will save me time in the end and help with menu planning. Theirs had more square cards though so the recipes on the back had more info/space.

I made something similar (after seeing it on Pinterest) and really like it. The only bad thing is that I like to try new recipes and don't want to make a card for everything I try. Usually I just start planning my week with new recipes I want to try an then "fill in" with the cards. I also like that DH can see what's planned for the week.
Monday - Chicken in tomato spinach feta sauce over wild rice.
Tuesday - Chili leftovers with corn bread muffins.
Wednesday - Spicy bean soup (from the freezer) with sour cream and tortilla chips.
Thursday - Slowcooker pot roast with slowcooker potatoes with salad.
Friday - Spinach, mushroom and cheddar omelettes with toast.
Saturday - Homemade veggie pizza
Sunday - Meal prep day so probably a batch of either the turkey veggie cream soup or veggie Mac n cheese.

Actually I'm doing a second round of sugar detox, mostly following Diane's meal plan (https://timreviews.com/21daysugardetox) - My husband was very happy with the results of the first round and convinced me to do a second detox challenge for 3 weeks.
