I slice up some chorizo or kielbasa and cook it with chicken and diced onion and bell pepper, then add a jar of sauce (I'm lazy) and a splash of vino. Simmer for something like 10-15 mins. Cook pasta at the same time.
Mix it together, pop in casserole dish, mix in one cup of mozzarella and spread another cup over the top. Sprinkle with Parmesan and Asiago and pop in the oven for 30 mins or until the cheese starts to brown. Add a salad and voila!
I'm planning on doing chicken breast with stuffed asparagus and a salad. I have some zucchini that I'm trying to figure out how I want to cook it
For the zucchini, I like to do long thin slices. I brush with a little olive oil, sprinkle with coarse salt and cracked pepper, throw it in a grill pan and then sprinkle with a little asiago (or parm) as soon as you take it out of the pan.
I'm making chicken. Marinated in a lemon/basil/olive oil mix, grilled, then stuffed with fontina and prosciutto. Served with mushrooms cooked in a white wine lemon butter sauce (white wine lemon butter is my favorite thing ever) and steamed broccoli.
For dessert I have amazing fresh strawberries. H likes his with fresh whipped cream, I like mine plain.

Breakfast! We had Christmas with my inlaws this past weekend and we got the waffle plates for our Cuisinart griddler. Waffles have been in my dreams ever since.

Love what everyone is cooking tonight!! I made whole wheat papperdelli pasta tossed with roast chicken, lemon, asparagus, tomatoes, garlic and fresh mozzarella.
@mmb248. I may try the zucchini cooked that way. I'm trying to find healthy things for us to eat.
You can also do stuffed zuccini. Seriously! It's pretty easy and it's healthy. I also make zucchini noodles sometimes.
I actually use to make stuffed zucchini a lot in the summer when I have a ton in my garden. I actually forgot about it, thanks for reminding me.

What if you stuffed the asparagus into the zucchini and stuffed the whole thing in a chicken? Stuff-ception?
You are on to something .... Except it's already in the oven :-( I'm seriously thinking that would be good though. Chop the zucchini small add some cheese and maybe some breadcrumbs. Stuff the chicken breast with mixture and asparagus. It would be even better wrapped in bacon or prosciutto.
I decided against the zucchini because I had some left over polenta that I cut in small bites and chopped up olives and sprinkled Parmesan cheese on top.
I've been cleaning house all day I was not in the mood of getting my stove dirty, I just threw it all in the oven.
A little background- the husband does not appreciate soup. His mom called on Sunday to check up on us and I think he was telling her that I was making him eat soup. I yelled at him and he started laughing and put me on speaker phone and they switched to English! I made sure she knew that the next night was chicken parm. (It was going to be that night but the chicken sat on the counter for hours and was still frozen rock solid)
Tonight we had the leftover chicken soup and turkey spinach cheddar whole wheat quesadillas. He asked me to make him an extra one and when I served it to him I told him I only made it so that he can't tell his mom I am starving him.
*update* He is actually doing the dishes! I can't believe he is able to do slave labor while having such a poor nutritional intake.......
