Casseroles for 9month old?

I have to go away for a week-long business trip.  I'm looking for one or two casserole recipes to make for my hubby so he can just heat and eat with LO.  Our son is 9 months old and will eat anything put in front of him.  I get nervous watching him eat, so recipes that make veggies and meat soft would make me most comfy.  Any ideas??  Thanks!

  • I made cheesy broccoli rice casserole last night ( super easy) and LO had some off my plate and loved it. If I made it again, if partially steam the broccoli so that it was softer after baking. I've made it with shredded chicken mixed in too. Keeps well in the fridge and leftovers are good too!

  • My LO is 8 months old and I wouldn't be comfortable feeding anything in a casserole to her yet, but maybe yours can handle more chunky food.  She only has 1 tooth and just mastered the puffs. 
  • Thanks, I might try the broccoli and rice casserole with chicken.  LO has been eating puffs/cheerios since about 6 months and does really well with finger foods - makes me a nervous wreck to watch him, but he has two teeth on the bottom and really mashes everything up in his mouth before swallowing.

  • What about an enchilada casserole? Layer flour tortillas, ground meat cooked with taco seasoning, refried beans, shredded cheese, and pour enchilada sauce over it. Your DH could even make tacos pretty easily. DD3 just had black beans, refried pinto beans, ground turkey (with taco seasoning), shredded cheese, and avocado for dinner tonight.

  • I would think most casseroles are fine as long as everything is cut into fairly small pieces. I fed Rhys Mexican casserole the other night and he LOVED it. It had corn, black beans, salsa, shredded cheese, etc. The only thing is that you really need to avoid giving any added salt to your baby. So when I am making something like that, I will pull a few spoonfuls out for him and bake that separately in a small dish, then add salt and bake the bigger dish for us.

  • I'm totally not there yet! He does grab handfuls of food off my plate but I'm afraid to give him things like cheese and beans at this point! How do ease in?
