I'm leaning strongly toward buying the City Mini Double for our newborn and 3 year old. However, I recently read a review that indicated the stroller becomes unwieldy and difficult to fold if you add the infant-carrier adapter. Anyone have any experience with this? (If true, this would be a big negative, since one reason I like the City Mini Double is that it's highly recommended for being lightweight and easy to fold!)

I bought a city mini double when I had my DD (now 2.5 yo) and my DS who was 2.5 yo at the time (now 5 yo).
I can't speak for how it is to fold it up with the infant adapter as I never purchased that. The City Mini is one of the few strollers that has a near flat incline and is approved for infants without the use of an infant car seat so I just bought an infant insert and used that. It worked great and I love my stroller. I plan on doing the same with this baby.
