New Meal Monday

Well, it took all day, but it's still Monday, right? As I mentioned in a previous post, as a New Years resolution, I am trying to cook one new meal each week. Some of you mentioned wanting to join me, so here we go.

1. Did you make a new recipe last week? How did it go? (Since this is the first post, care to share an old favorite if you didn't make something new?)
2. What are you planning to try for this week?
3. GTKY: What's one ingredient you can't imagine living without?

  • 1. I made Rachael Ray's Maple Glazed Pork Chops with scallion mashed potatoes. The glaze for the pork was disappointing, but adding 2 sliced scallions to mashed potatoes was life changing. They had do much flavor that they really didn't need salt or butter.

    The glaze for the chops just had way too much liquid, but here's her recipe:
    1 c. Chicken stock
    1/4 c. Maple syrup
    Zest and juice of a lemon
    1T. fresh thyme
    If I did it again I think I would use 1/4 c chicken stock and 1/3 c syrup.

    2. This week I am planning to make chicken enchiladas with pumpkin sauce. It's from a Martha Stewart cookbook.

    3. I would hate to not have real parmegian cheese. It makes so many things taste better.

    I didn't know you were doing this but I'm on board!

    1. Last week, I made a rib roast for the 2nd time in my life, but let's just say it was the first since the previous time was over 10 years ago.  Rib roast = prime rib.  This is something we go out for but never eat at home. My father-in-law requested it for new year's so I said, "Sure why not?" I bought a 4-bone roast (which was HUGE - this thing was too much for 6 of us) but it turned out perfectly medium rare and delicious. I took it out of the fridge 1.5 hours before cooking so it could come closer to room temp. Seasoned heavily with salt, and Trader Joe's 21 Seasoning Salute, then put in a 450 oven.  After 20 minutes I turned the heat down to 300 and cooked until the meat thermometer reached medium rare.  I also had some beef stock in the freezer that I used to make au jus, plus I made skin-on garlic rough mashed fingerlings, and green beans.  I'm really excited that I was able to nail this dish, but it's not something that will go into regular rotation. Maybe once or twice a year.

    2. I have lots of quinoa in the pantry that needs to be cooked, so I'll be making something with that this week.

    3. I don't know what my must-have ingredient is. I keep a pretty large stash of spices and use those constantly. I also keep stock & broth (mostly chicken) in the freezer, and use in so many things.

    Yes, I made slowcooker hoppin John. It was really good! This is the recipe. I added shrimp and in the future I wouldn't cook this dish with rice in it. The rice was too mushy. Recipe: https://crockpot365.blogspot.com/2010/09/hoppin-john-slow-cooker-recipe.html?m=1

    2. What are you planning to try for this week?
    I had no idea about this challenge but I put something new in the crockpot tonight. It's a simple shredded BBQ dish - boneless/skinless chicken breasts covered in BBQ sauce on high for 3 hours. I will serve it on hot dog buns with baked beans and a salad on the side. Not sure why I never made this before but I can't wait to eat it!

    3. GTKY: What's one ingredient you can't imagine living without?

    Pepper. I don't like things too spicy but I love pepper.

  • 1. Did you make a new recipe last week? How did it go? (Since this is the first post, care to share an old favorite if you didn't make something new?) I made a pear and brie pizza, it was delicious. I just made a regular pizza crust, and then spread melted butter with garlic and thyme over the crust. Then put sliced pear over and brushed them with the melted butter mixture but added wine vinegar to it. Then put the sliced Brie cheese on top, baked then put fresh arugula on top after. 2. What are you planning to try for this week? I made a curry, squash and apple soup with cheddar scones. 3. GTKY: What's one ingredient you can't imagine living without? fresh herbs, I grow my own.

  • I don't cook a lot (well ever if I am being honest) But I love the idea of just trying to make ONE MEAL a week. It would give my husband a break and I would really like to try. I think in 4.5 years of marriage (7 years of being together) I have cooked 8 times. I will be following this and seeing if I can catch any yummy pointers and new things to try! Any tips would be awesome! (P.S. @lioness13 I really like the slow cooker idea. I can throw it in before work and come home to a good smelling house!)
  • 1. Made Cuban sandwiches, nothing fancy but it was one of those weeks.
    2. Haven't thought about what I will do this week. Maybe something with fish.
    3. Can't live without chocolate of some form in the pantry so that I can make brownies, cookies, cakes, smores etc. I'm a dessert slut.

    I don't cook either but I really want to start trying, like you said, maybe one meal a week. I made a yummy veggie quiche yesterday. Store bought pie crust filled with a spinach, mushroom, onion and feta mix covered with eggs and milk. Yummy and DH was proud of me!

    This week I'm trying to eat healthy so I'm doing salads for dinner. I roasted a chicken on Sunday night and pulled all the meat for the salad this week. I put lettuce, chick peas, broccoli, corn, chickrn, hard boiled eggs and avocado with whatever dressing I have in hand. This will get me through wed night and then Thursday night we will probably pick up chipotle.

  • I made chicken stuffed with cream cheese wrapped in bacon. It was good. The plain cream cheese was sort of boring though.

    I plan to make a beef tomato soup this week.

    Slowcooker cooking is the easiest! Just start with cooking on a weekend day when you can keep an eye on it (it is possible to burn food). I do most of my slowcooker cooking on Sundays. Let us know what you try!

  • @lioness13 that's my plan! I had texted my husband earlier "I am cooking you something this weekend." He was so confused, he thought it was code for something :)
  • I don't cook... But can someone type the proper pronunciation of quinoa please? Ben and I stood at the grocery store trying to say it the other day like two boobs!

    Quinoa = keen-wah
    and it's delicious!

  • For anyone who wants to get started but doesn't know where/how, look up Mark Bittman and his Minimalist recipes. There are tons of them online. I have at least 20 cookbooks, and of all of them, I return to his most frequently.

  • I haven't tried any new recipes. I did see one on Pinterest yesterday that you put spinach and feta in a chicken cutlet, roll it up and back. You can either bread it or not. I might try it tomorrow but substitute mozzarella for feta bc hubby doesn't like feta.
