NPR: Favorite New Year's Appetizer or snack

I'm at a loss for what to bring to a friend's party tomorrow night. There are kids and adults. Some of the adults are vegetarians and/or picky eaters. What would you be happy to see at a party? Since cocktails are out I was excited about all the yummy food, but now nothing sounds good.

  • Brie for sure. I love Brie.. Or cream cheese with pepper jelly and crackers. Yum.

    I would try Happy Herbivore (her site has a "kid friendly section") and 100 Days of Real Food. I get a lot of my recipes from the Happy Herbivore cookbook.

    Also, you can never go wrong with a veggie platter. You can serve with both hummus and ranch. Or a fruit platter with fruit dip. 

    Also, layered taco dip with refried beans substituted for ground beef. I went to Party City and got small glasses, and made individual cups with chips on the top, pictured here (my glasses were smaller - enough for about 5 chips or so). It's a lot more work, but has a "wow" factor. image

    Ugh, people already claimed the fruit, veggie tray, and hot dogs in a blanket. But keep the ideas coming!

  • I love chili cheese dip and taco dip....I will be making both and thinking of making just one of each for myself ;) My DH loves the shrimp cocktail dip with crackers and the buffalo chicken dip. we go all out for New Years...since it's the last holiday excuse for awhile to eat bad 

  • My go to appetizer is veggie pizza squares. They are always a hit. All you do is spread crescent roll dough on a pan and bake it (for however long it says on the package or until golden), then mix 1 packet of ranch dressing powder with 1 package of cream cheese and about 1/4 cup of mayo. I dont like it to taste too mayonnaisey so I don't add much. Spread on top, then add cut up red peppers, shredded carrots, and raw broccoli to each piece and cut into squares. Let it sit in the fridge before serving. Everyone always asks me for the recipe. It's so easy and so good

    Haha, no I mean does it have to be baked
    there, like at the party or can I do it ahead of time at home? I'm just imagining it not being so hot and melty by the time I get there (about 15 min. away)

  • Most of the time after you make baked Brie it's recommended to let it rest for 15-20 min so that would actually probably be perfect

    I love Pinterest for these kinds of things. I would say mini pizza's, mini monte cristo's, twice baked potatoes in little glasses, baked potato bar, mini grill cheeses and tomato soup, chili cheese fries, Jello salad or meatballs. All winners in my book. :)

    Ooh, also deep fried pickles or bacon wrapped water chestnuts are amazing. :). Ok, now I am really hungry.

  • You can never go wrong with homemade salsa and/ or guacamole!
    I also second the buffalo dip. As PP said, there are lots of recipes for that you can find for pinterest including veggie, vegan, and GF versions!

  • This post is making me so hungry. I would like that jalapeño dip in my belly right this second..
  • we make "crack" dip..this is a huge hit.

    2 packages cream cheese, slice and put in the bottom of a disposable tray.
    cut up one large onion and sprinkle on top of cc.
    2 cans of hormel vegetarian chili poured over onions
    topped with 2 bags of mexican shredded cheese

    bake on 350 until melty
    stir all the goodness together..
    eat until you can't!

  • I've made the brie right before I left for a party, but it's something that has to be eaten soon. It's all hot and melty and delicious, but once it starts to firm up again, not as appetizing. I slice mine down the middle and layer raspberry jam inside. yum

    If you want to be fancy veg, dates stuffed with goat cheese

  • @shannonliggett Does your mom bake the dip or do something to melt the cheeses, or mix it and leave it just like that at room temp? Sounds delicious!

  • Pico de gallo
    3 tomatoes
    1/2 onion
    1/2 cup cilantro leaves fresh
    a few jalapeno slices cut in small small pieces
    1 lime
    5 tablespoons of extra v olive oil
    salt pepper to taste

    serves 3 people. Multiply for additional servings.
    Super healthy and yummy.
  • I'm super late to the party here but I'm bringing little smokies, wrapped in bacon, covered in brown sugar, and baked. It's like crack, only totes ok for pregnancy.
