We always have sticky buns. I have no idea how they are made but they are delicious. My aunt always makes them for everyone on Christmas Eve and all we have to do is bake them. Yum yum!
MIL always does a yummy breakfast casserole, pretty similar to @msspeedymarie. Slice French bread 1/2inch thick and line baking dish, put cooked sausage crumbles on that, beat 6 eggs with 2 cups of milk and salt and pepper. Pour egg mixture over sausage. Top with green onion and shredded cheese. Make it the night before if you want and just refrigerate and bake the morning of. 350 for about 45 min
I'm going to do a crockpot casserole that I found on Pinterest. I love the idea of not having to hassle with cooking in the morning as well as a million dishes to clean up.

I'm trying one of those crock pot egg bakes this year. It'll be the first time I've done one.
I've done those before for tailgating at early games and they are always a huge hit. The great thing is you can throw in pretty much any ingredient you want! I like to add potatoes for some texture aside from eggs.
We used to eat waffles for breakfast at Christmas. Then the children started to get married and waffles weren't manageable so my mom makes cinnamon roll dough in the bread machine and puts the rolls together the night before and pulls then out of the fridge in the morning while the oven preheats.
Since I'm not home this year I plan on making an oven pancake. It's kind of like a giant sweet popover. I'm very excited about it and it may turn into our family tradition.

That's how we make them in my family. When my H and I first started living together, one Sunday morning I said I was gonna make cinnamon rolls. Half an hour later I came into the living room with a plate of the pillsbury ones, and he's goes "what's this?" And I said, "cinnamon rolls" and he says, "oh" real sad. And I said, "did you think I was actually going to make dough and bake real cinnamon rolls, are you nuts?" His parents are hippies and make most food from scratch, where in my family everything was mostly pre packaged.
I love the pillsbury ones and it is so much easier, especially on Christmas morning. I think my mom used to make them from scratch but then we got smart.

from my mom:
Recipe: 12 oz. sausage, cooked and crumbled(I use Jimmy Dean already cooked sausage crumbled in a bag about 1/2 the bag)
6 slices of bacon, dice and cook.
6 english muffins
1 cup (4 oz.) shredded cheddar cheese and 1 cup (4 oz) shredded Mozzarella cheese,
1/8 to 1/4 cup of onion and red pepper( goes easy on onion and pepper or it will over power the taste),
12 eggs whipped add 2 cups of milk and whip some more(whipping the eggs and milk makes it fluffy) add1 teaspoon salt and 1/2 teaspoon black pepper to the eggs.
dice up muffins, sprinkle all the toppings on ending with the cheese.
Whip the eggs and milk and CAREFULLY pour over muffins.
Use a GREASED 9 x 13 pan.
bake for 45-50 minutes at 350. Insert a knife to check to make sure it is cooked through.
With this recipe you can add or delete anything you want!
Let it sit for at least a 1/2 hour or over night before baking.
ETA: I bought some shredded hash browns to throw into mine!
