DD LOVES omelettes. We sneak in meat and veggies. We've also started sending her with a turkey sandwich twice a week to the sitter. Apparently she loves eating a big girl sandwich. Grilled cheese is good. She also likes eating cheese (American or provolone). She still loves cottage cheese, but we're trying to give her things she can feed herself.
Snacks or lunches: cheese sticks, quesadillas, yogurt, bananas, hard boiled eggs, blueberries, she LOVES any shredded meat (chicken or pork), beans, avocado, PB & J, turkey slices, mini meatloaf muffins, toddlers muffins...here is a recipe if you're interested https://allrecipes.com/Recipe/Toddler-Muffins/Detail.aspx
my standbys that I give her in addition to whatever we are usually eating are:
scrambled eggs, peanut butter toast, yogurt, cubed tofu, lentils, diced cooked veggies, or fruit
otherwise, she gets what we get. some of my standby family dinners are baked chicken with roasted veggies and mashed potatoes, Thai curry, stirfry, or burritos with beans and sauteed veggies
