This is going to sound pretty juvenile, but for the sake of honesty...
Farts. I knew that babies farted, but sweet fancy Moses I'm impressed. Every time I change his diaper, I get punched in the face by a horrible invisible fart cloud and I can't help but laugh. And when he farts so loud that I can hear it across the room...oy.
What surprises you about your baby (aside from the obvious overwhelming love)?

The amount of spit up. I don't know what I was thinking but I remember being all "oh we won't need that many clothes" "oh a couple burp cloths"... um. No
Seriously we've started using receiving blankets because there is that much at times. And I have checked with our pedi. All is totally normal but... damn.
I also surprised myself with how normal it is not to be thrown up on, pooped on, peed on... it's no biggie.

2. The smell of his poop and farts. Gag.
3. He would refuse the bottle. I thought it would be the other way around, that he would prefer the bottle over my boob. Nope. He also refuses the pacifier and I want him to take one so bad.
I just laughed outloud and almost woke up my LO. I was shocked when I saw this as well.
I knew babies had loud, smelly farts, but I had no idea DS would fart as much as he does and for as long as he does. I mean he'll fart all day long for like 5 minutes straight I feel like.
I was surprised how quickly he gave up the paci. It only lasted a few weeks. You try to put it in his mouth now and he glares and you and spits it out. He has quite the 'tude when he wants to.
The things he enjoys looking at. A lot of the time they're the most mundane things, like the corner of the ceiling.
How cute she is! And how little hair she has. And how she doesn't really look much like me or dh.
How attached she is to me. I assumed she would be a daddy's girl but when she's tired and grumpy she wants nothing to do with him most of the time.
I'm still surprised by her existence. I. Made. A. Human. Human! Fully functional!
We're one and done!
How satisfying getting a burp out can be. I feel actual pride.
How much his crying impacts me! I totally thought I'd be in the eh, crying doesn't bother me, camp. Nope. Sometimes it physically pains me when he gets a good wail on.
How much I enjoy being told he looks like me and how much he does look like me. I thought he'd look more like daddy!

Also, I remember the first time I was jokingly about to munch on his toes and he little feet had a small stink to them! Totally shocked me.
Oh and I was told that EBF baby poop doesn't smell. That's a bold faced LIE!!!
I'm also surprised at how patient I am with him. I just want him happy all the time and I thought I would lose it more often but I'm so patient with him. I remember getting annoyed at kids I babysat, mind you they were older and bratty but I can't imagine getting super annoyed with him; he's too damn cute! I'm sure it will happen at some point but it hasn't happened yet.
Edit: that smily is creepy... mine also won't take a bottle... Hope she figures it out before Monday when I got back to work I guess she just likes the boob to much as well
He also does not take a pacifier. Of he does it's for 5 minutes tops then wants nothing to do with it. He prefers his fist.
Also...snoring. It cracks me up.
