Ideas needed from TTMs and SAHMs (or anybody who want to respond really)

Needing some ideas for easy, healthy(ish) lunches/snacks to feed my DS while we are at home for my maternity leave. We really don't keep "lunch" stuff or "Munchies" in our house because nobody is ever home during the day to eat it. We eat breakfast and then we come home and eat dinner. On weekends or days off work, I typically cook something up, but i highly doubt that in those first few weeks I will feel like cooking lunches and dinners while taking care of a toddler and a newborn. I know there are always sandwiches, but i figured that would get old after awhile. We have no food allergies and my son is not a picky eater...and no, we don't spank ;-)  

I am sure i am WAY over thinking this (because i over think EVERYTHING), but i really fear getting caught in a frozen chicken nugget or Hotdog and mac and cheese rut...

  • My kids like quesadillas, just shredded cheese on a whole grain tortilla, and you cam add whatever meat/ veggies as you like.
    Make pizzas on an English muffin, sauce, cheese, pepperoni, whatever then put it in the toaster oven for a fee mins
    We've also been eating Applegate hot dogs on occasion
    Whole grain pasta with marinara sauce & 'sprinkle cheese' aka parmasean cheese.
    I always have them pick a fruit, cutie, banana, applesauce, etc and a yogurt or cottage cheese.

  • Tortilla roll ups are a good alternative to sandwiches. Spinach, turkey, swiss cheese, tomatoes... yum! Also easy to make ahead!

    I like pre cooking pasta and keeping it in the fridge to make something quick. Bow tie pasta with broccoli, ham, and cheese is an easy warm up lunch. Just as easy as Mac n cheese, but healthier and more versatile! :)

  • My DS is the same age as yours, and I SAHM 6 days a week. We typically do a light lunch. Grilled cheese variations, yogurt/fruit, cheese & cracker plates with sometimes pepperoni or sausage. Honestly, our toddler rarely eats much for lunch, and prefers to snack mostly so I just go with that. Occasionally I get lazy and we have frozen chicken nuggets or fish sticks. 
  • We're kind of in a rut, but that's because DD is a creature of habit when it comes to eating right now. But I know she'll always eat the following: PB or almond butter and strawberry jam sandwiches, grilled cheese sandwiches, English muffin pizzas, hot dogs cut up in small pieces w/ketchup (I like the organic Applegate Farm brand), Annie's spaghetti-O's or Mac and cheese. Sometimes chicken nuggets (also Applegate farm brand), fish sticks (Dr. Pragers), or the occasional deli turkey and cheese rollup...she's not much of a meat eater but I keep trying. She is really good about eating fruit and veggies so I never have trouble getting those into her. She won't touch things like tuna salad, chicken salad or egg salad unfortunately, but I'm working on her!

  • If I'm not mistaken Purdue makes grilled frozen chicken nuggets and/or lightly breaded ones. So it may be a "healthier" chicken nugget option. Also, I vote for saving your sanity! There is always pb&j or just turkey/ham sandwiches, grilled cheese. You can do breakfast for lunch and scramble some eggs real quick too!

  • String cheese, yogurt, fruit, fruit, fruit. Quesadillas, peanut butter toast, grilled cheese. My kid won't eat meat, so we try to get protein in other ways.

  • We do a lot of snacking rather than full lunches. My kids are big on string cheese, yogurt, apple slices, peanut butter, raisins, yogurt melts, cereal bars, grilled cheese, and, yes..chicken nuggets too!

  • In addition to what others have said we have done the laughing cow cheese on english muffins and my little one really likes soups since it's been cold.  Some noodles and veggies in a broth is easy!
  • Great suggestions! I am not very good at thinking out of the box when it comes to food, so this really helps :-)

    Don't overthink it, a steady diet of chicken nuggets and Mac and cheese is a small price to pay for your sanity ;)

    He is 20 months also! (Well... almost, technically a couple Weeks away)

    I'll have to check those out. We are not super health nuts or anything, but we do try to be conscious and smart about what we're eating. I am all for a healthier chicken nuggets that mil can't make me feel as guilty for making! (mil and her sisters are very natural and organic, which is great for them, i am sure they will greatly benefit from it! but I just wish she would keep her opinions about our choices to herself)

  • DS will be 2 on 12/28 and he eats everything we eat but some examples are soup, pb&j sandwich, grilled cheese, toasted lunch meat with cheese, chicken tenders, pastina with egg, fruit, hard boiled eggs, yogurt, and Mac n cheese.
