s/o Christmas UO - magic CC cookie recipe

I got about halfway through the UO/FFFC and saw the side conversation about cookie recipes and not finding ones that work, or family being stingy and keeping "secret" recipes.  I wanted to add a magic CC cookie recipe variation that I've used forever.  Feel free to add other variations of it here, in case anyone else is looking for magical recipes!

I use the Nestle recipe, with these changes: 

- use 1/2 cup granulated sugar, and 1 cup brown sugar (instead of 3/4 and 3/4 c).  I sometimes use both light and dark brown sugar.  If you only have dark brown sugar, stick with 3/4 and 3/4. 
- no nuts (personal preference, I don't like crunchy)
- add a 1/2 tsp of amaretto in addition to the vanilla extract (you can also substitute all the extract with amaretto instead)

  • I am going to give this a try.  I've thought about adding 1/2 tsp of Almond extract to them which sounds a little like what you do with the amaretto...YUM.

  • @mommap12 - I've done both the amaretto and the almond extract, and the amaretto is less almond-y, while still being delicious.  Have fun!! :)

  • I was going to say earlier that the CC recipe I get the most compliments on comes from the back of the back of nestle chocolate chips:) Glad I'm not alone!

  • I make some bomb diggity CC cookies. Allrecipes>award winning soft cc cookies. Secret: vanilla pudding, extra vanilla (2tbsp), cold cookie sheets+ parchment paper and slightly under cookied. BAM

    @mommap12 it keeps the cookies from spreading on a hot sheet. Chewier, thicker cookies. I run mine under cold water.

    Pull from oven slightly under cooked, leave on sheet for about 2 mins and then slide the parchment paper off to finish cooking. Let my sheet cool while the next batch is baking.

    a question for all you cookie experts-
    I bought a cookie cutter to make shaped cookies for Keagans birthday next month. I'm really not sure how to use it though. I would love to do sugar cookies since I have a great recipe for them and I think they would be easy todecorate, can i use any dough with a cookie cutter? and then roll it out, cut and bake? anyone have any rec's for a good dough that won't lose its shape too much? I'm definitely going to try using the cold cookie sheet like suggested above! Perhaps I will do a trial run in a few days...

    This is my old favorite recipe! I prefer the other right now but I bet I'll circle back to this again. I remember using pistachio pudding once and liking that:) but I love anything pistachio.

    DH is a weirdo though and after I made these a few times, he asked for me to leave the CC out. That's how we make them now - chocolate chip-less cookies.

    Yes! they should finish cooking for a minute or so after they come out of the oven. Then remove them to cooling racks and store between parchment for soft, fabulous cookies.

  • @holly_1007. Allrecipes- the best rolled sugar cookies. I haven't made recently so I can't recall any changes. But skim the comments. Again, pull out before completely finished (twss)
