Let's talk turkey...leftovers

How are you doing with turkey leftovers? So far I've made turkey, cranberry sauce, & cream cheese on croissant sandwiches, turkey shepard's pie (w/ leftover mashed potatoes, corn, gravy), fettuccine alfredo with turkey and broccoli. Tomorrow I'm planning on making turkey enchiladas. I think I am running out of turkey ideas and turkey patience! How much longer will your turkey last.

  • Southwest turkey chowder...I'm not home so I don't have a recipe, but it starts with a couple cans of cream of chicken, you add some onions, green chiles, bell pepper, and of course turkey
    Me: 30, Dx Unexplained/hypothalamic amenorrhea
    DH: 31, normal!
    April/May 2011: Menopur + Ovidrel +TI = BFN
    Oct 2011: Menopur + Hcg +IUI = BFP!
    Beta #1 (13dpiui)= 129.7, Beta #2 (15 dpiui)= 305

  • I don't have much for leftovers, and I'm trying to be dairy free for baby's reflux, so I've been eating turkey and guacamole on pita bread.

    One of my favorite leftover sandwiches though is turkey, cranberry sauce and Brie paninis. You could also make pot pies.
    IVF, acupuncture, meditation and a miracle.

  • I hate turkey so I'm no help! But H has been eating a ton of turkey sandwiches and L has been nibbling here and there.

  • You still have turkey?!?! I put some in a cold pasta salad. It was good. Turkey noodle soup would be good too if it's cold there.

  • I've made turkey pot pie, and both DH and I have been eating turkey sandwiches.   Love @emazeem suggestion of turkey lentil soup! I have lots of leftovers but I portioned them out and freezed them, so I don't have to eat turkey everyday for the next month!

    Yes, DH didn't ask me for head count before he bought the turkey. WAY too big!

    @pb_bride, I never thought about freezing the cooked turkey. I guess I didn't realize you could do that. I will definitely do that next year. That would be a lot less pressure than different turkey dishes every night for a week, hahaha!
