So, how did your pumpkin cheesecake turn out? I've always wanted to make one, but wasn't sure how it would turn out...

    It was good, but I think I should have baked it a little longer. The recipe said 55-60 minutes. I did 60, but probably should have done 70. It was kinda mushy. Now that it's sat overnight, it's better but still not amazing. I'll probably try it again near Christmas.

    Hmm...yeah, I find cheesecakes can be tricky to bake properly without them ending up dried out. Hopefully your next try turns out better!
