  I am doing a curried couscous that is chilled and tossed with parsley, shredded carrots and dried cranberries (also almonds and green onion if you like them which I do not). It's a major hit with my family.

  Cranberry relish!  1 bag of cranberries, 2 sweet apples (I used honey crisp), 2 oranges.  All chopped up to the same size - I used my food processor this year.  And then I sprinkle 2-3 Tablespoons of sugar, more if it's still too tart.

  How about a spinach salad?  You could make the dressing ahead of time and just mix everything together when you get there.  The one I usually make is baby spinach, dried cranberries and slivered almonds.  Everyone loves it even though its usually the only healthy dish..
