I'm looking for something that is yummy, that I can feed a crowd, and will be safe for my DS who has a dairy, oat, and strawberry allergy. I already have safe mashed potatoes, but I need some other safe options that I can bring to my in-laws.
To make the recipe easier I use the pre chopped butternut squash pieces---they sell them in containers at our food store. I hate, hate cutting up and peeling squash.
I made this as a trial this week and both kids scarfed it up. I seriously think there isn't a single Pioneer Woman recipe that we've tried that we haven't liked. DD was all over the colored carrots!
