NBR: Holiday Baking

My inner fatty is already thinking of all the delicious pies and cakes that await me next week and the rest of this holiday season.

So tell me, what are your favorite things to bake during the holidays?

Bonus points for recipes/links!

  • The Simply Recipes PB Cookies are My Favorite! I put a Hershey's Kiss in the Middle and use a potato masher instead of forks to make the marks because I think it's prettier.

    • 1/2 cup sugar
    • 1/2 cup packed brown sugar
    • 1/2 cup butter, room temperature
    • 1/2 cup peanut butter
    • 1 egg
    • 1 1/4 cup flour
    • 3/4 teaspoon baking soda
    • 1/2 teaspoon baking powder
    • 1/4 teaspoon salt

    METHOD

    1 Beat the butter until creamy, 2 minutes. Add the sugars, beat for 2 more minutes. Mix in the peanut butter and egg. Mix together the dry ingredients - flour, baking soda, baking powder and salt. Stir the dry ingredients into the sugar butter mixture.

    2 Wrap dough in plastic and refrigerate at least 3 hours.

    3 Preheat oven to 375°F. Shape dough into 1 1/4 inch balls. Place about 3 inches apart on ungreased cookie sheet. Flatten in crisscross pattern with a fork. Bake until light brown, 9 to 10 minutes. Cool on baking sheets for a minute; transfer to rack to cool completely.

    For chewier cookies, bake at 300°F for 15 minutes.

    Another Favorite of mine if Afghan Butter Cookies--they are Gluten Free too!

    Afghan Butter Cookies
    Kulche Birinjee3/4 cup butter (1 1/2 sticks), softened to room temperature
    3/4 cup sugar
    2 egg whites
    2 cups white rice flour
    1/2 tsp. ground cardamom
    1/4 cup coarsely chopped pistachios (you can leave out if you don't like nuts)
    1/4 cup shelled whole pistachios
    Instructions:
    Preheat oven to 350 degrees.
    Beat butter and sugar with an electric mixer until light and creamy.  Add the egg whites and mix until smooth.  Gradually add the rice flour, cardamom and pistachios (if you choose to use them).  Mix well.
    Scoop up a tablespoon of dough and set on a cookie sheet (ungreased is ok). Flatten the dough with the palm of your hand. The cookie will not rise or spread during cooking. Next, press the back of a fork into the dough, making a criss-cross with the tines of the fork (like you would with a peanut butter cookie).  If the fork begins to stick, dip it in a glass of cold water from time to time.  Place a pistachio in the center of the cookie.   
    Continue with the remainder of the dough, setting the cookies 1 ½ inches apart.
    Bake for 12-14 minutes.  Let it cool before eating.

  • @LJUTCMommy I have an obsession with peanut butter cookies.  I actually just bought some from the cafeteria for my afternoon sneak :) [the lunch ladies make them so good!]

  • I actually have a home baking business and my house has a constant coating of powdered sugar on everything during this time of year. I love decorating fancy sugar cookies with royal icing, & will be working on a praline pecan/caramel cheesecake for dessert this week. I'm testing out a pumpkin version of bienenstich cake too but have no idea how it's gonna turn out just yet.

    Annie's Eats is my go-to food blog :) I've made those cupcakes probably more than 10X.
    I loveeee decorating with royal icing.  I wish I had more time nowadays... Do you have a blog or website for your goodies? I'd love to see ;)

  • I am a traditionalist when it comes to Christmas cookies - I must bake and consume sugar cookies... the kind you roll out and decorate with buttercream frosting and sprinkles. Yum!

    Eggnog cheesecake, chocolate pixies, and sugar cookies with royal icing are my favorite things to bake this time of year. I also like to make peppermint flavored fudge. Recipes are at home, but I'll try and post later.

  • Not really baking, but one of our holiday traditions is this ice cream pie:

    Crust = Rice Krispie treats formed in pie dish

    Add a layer of good quality vanilla ice cream that is slightly softened. Sprinkle with crushed candy canes. Add another layer of ice cream. Sprinkle top with crushed candy canes and decorate with a few small candy canes.

    So easy!
  • I love going over the top with decorating sugar cookies. Royal icing in several colors, piping bags, every sprinkle, dust, gems, bits, jimmies, you name it! 

    Chocolate crinkle cookies are- by far- my favorite to consume.

  • I make these pumpkin muffins that are so easy...
    One box yellow cake mix, one can pumpkin pie mix. Mix them together, bake them for 20-25 minutes.

  • Mmmm I LOVE holiday baking. I usually make powdered sugar cookie balls, green wreaths (like rice krispie treats but with corn flakes shaped into wreaths), chocolate crinkles, and my FAVORITE.. chocolate gingerbread men with white icing. Yum yum yum.

    I have a cake pop business that has pretty much gone to nothing since I had baby number two because I have no time for it anymore.

  • My favorite baked good to consume is my mom's flan.  She's won prizes for that thing, it's phenomenal.

    My favorite to bake: I love Martha Stewart's Apple Bundt Cake with Caramel Drizzle.
    I love making peppermint sugar cookies and decorating them with royal icing.
    And love love Puerto Rican bread pudding.

  • @KatieS7, I've always been the neighborhood/family person people went to for baking stuff so it just kind of evolved via word of mouth. I made up cute little business cards from Vistaprint and usually send a couple of those along and that's pretty much the extent of my advertising.
    For friend & family events I can make pretty much anything but if I do business with corporations or for bigger events there are several local city guidelines I have to follow to "legally" be able to serve them as a home business w/o licensing & inspections (mainly relating to not using ingredients that will spoil/cause food borne illnesses). Definitely check out local laws if you plan on serving that market.
    It's not something I'd ever count on to support our family, during the normal months I get about 1 order/week. Holidays get busy and I can make a good chunk of my holiday shopping $.
    I do Facebook-promote a holiday cupcake box with a dozen assorted cupcake flavors and deliver those around town on the last working day before Xmas. Last year I had about 20 of those go out. It's a lot of work but I've noticed I've gotten quite a bit faster & more efficient after doing it for so long now. I just hate doing the dishes afterward. Ha!

    I just wanted to add to that - a lot of states have laws that require you to have a commercial kitchen to be able to sell baked goods. At least, that's how it is in CA. So legally, I was unable to get a business license (I have a little cake pop biz.) I have a website on Facebook that I used to advertise and get the word out but I am not a legit company so I try not to spread the word too much.
  • I am known for making about 6-7 different batches of Christmas cookies and am mega sad I probably won't be able to do that this year. I'm having a cookie party instead so at least I will get to eat different kinds of cookies. For thanksgiving I'm making DH's favorite: apple pie. The crust and filling are already made and in the freezer, just hafta defrost, assemble, and bake!
    Shoot for the moon. Even if you miss, you'll land among the stars.

  • I made mocha cakes today for my Christmas baking. I made a pound cake, then a peanut buttery frosting, and rolled them in smashed peanuts. I've also got my peanut butter balls done. Next are nanaimo bars.

  • I make Christmas cookies every year. I used to go all out w 7-8 different kinds and make hundreds of cookies. Over the years as I've had more and more kids (ha!) I've scaled back. This year I think I'll only do 4 different kinds. My sister helps me, too.

  • I make Yum Yums. I'll try to post the recipe later. It's a cookie type crust with a brown sugar and coconut topping. I am not a coconut fan but I love these.

  • Trifle.. It's got layers of chocolate cake, chocolate pudding, score bars, whipping cream and repeat. So simple but soooo good. And my god, I've mastered the best damn peanut butter cookies you will ever eat. I turned y peanut butter cookie hating dad into a lover. AND peppermint m&m's cookies. So f'in good
