... this holiday season is two really great recipes.
1 -- healthy mashed potatoes. I've been making these for years, and they are delicious -- nobody ever believes me that they are healthy, because they taste so good. I just whipped some up yesterday to have on hand this week with dinners, and froze half of the batch for later. These have no butter or oil or anything, and are absolutely delicious!
2 large boxes of chicken stock
1 shallot
1 lb bag of yukon gold potatoes, quartered
1 can evaporated milk (optional)
Bring the chicken broth to a boil and boil the potatoes until they are fork tender.
Dice shallot and roast in a little chicken broth
Blend with immersion blender or with mixer (I use my kitchen-aid), adding little bits of the broth that you boiled the potatoes in. Add splashes of evaporated milk if necessary, until you get the consistency you like. Salt, pepper, whatever other spices to taste.
2 - made this for dinner last night and it was delicious.
Cook and chop 3 chicken breasts
Mix with about 1 cup of shredded cheese
Using pillsbury crescent rolls, roll up the cheese / chicken mixture and arrange in a baking dish
Pour 1 cup of milk over the top
Spoon cream of chicken soup on top of each roll
Sprinkle with shredded cheese
Bake at 350 for 60 minutes until cheese gets bubbly.
Total comfort food and not at ALL healthy, but very easy and delicious on a cold night!
