Just made these this morning with my 2 year old. She was very helpful with the M&Ms.
As a note, this is my own lactation cookie recipe that I came up w when I was pg w DD1 and I had a blog where I posted stuff like this. so it's not officially approved by an LC or anyone.
1 cup unsalted butter
1 cup sugar
1 cup firmly packed brown sugar
2 eggs
1 teaspoon vanilla
1 cup unbleached flour
1/2 cup whole wheat flour
1/2 cup flax seed meal
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
3 cups quick cook oats
4 tablespoons brewer's yeast
1 cup (approximate) dark chocolate chip M&Ms (substitute with an organic version if you are so inclined)
Directions:
Preheat oven to 350°.
Beat butter, sugar, and brown sugar well.
Add eggs and mix well.
Add vanilla, beat well.
Stir together flour, whole wheat flour, oats, brewers yeast, baking soda, salt and cinnamon.
Add dry ingredients to butter mix.
Scoop onto baking sheet.
Stud cookies with as many M&Ms as your new mom may need
Bake for 10 minutes.
Let set for a couple minutes then remove from tray.
