Recipe inspiration please

We're having a nice family dinner tonight and I'm supposed to bring a veggie dish. I want something a little different than my usual but I'm drawing a blank.

I have kale, red bell peppers, carrots, and butternut squash on hand, but I need to run to the store anyway so any ingredients are fine.

What are your go to veggie dishes for company?

My fav is roasted winter veggies: Chop onto cubes: white potatoes, sweet potatoes, butternut squash, carrots, and parsnips. Slice 2 shallots into rings. Slice thinly a few cloves of garlic. Toss with olive oil S&P and bake at 425 for 25-35 mins, stopping to toss every 10 mins or so. SO GOOD

My PITA dad claims he can't eat green beans and broccoli or things things that are "too chewy", so I can never make those even though I like them!

Wow, I realize that makes me sound bitchy. It was meant in jest. My dad has all sorts of ailments that my mom and I roll our eyes at and think are all in his head.
