AW: My cooking skills (NBR, duh)

So for supper tonight, I made a variation on chicken pot pie - I made the filling, then made biscuits and served the filling open-faced over a split biscuit. I quite honestly believe that it's the best chicken "pot pie" I've ever had. Even my 2 year old, who's been on a hunger strike and even when he does eat, has suddenly become a vegetarian, ate the hell out of his portion. I'm no slouch in the kitchen, but tonight I'm just so proud of myself that I wanted to share.

What'd y'all do for dinner tonight?

PS: I made sure to include "AW" in my title, so as to not alienate anyone that has limited to no skill in the kitchen, or anyone who's been having a hard time cooking supper regularly. You know, cause I'm not necessarily a "regular" poster and would hate to cause dramz.

  • I generally don't cook Fridays and Saturdays (work makes it impossible for DH and I to see each other on the weekend, let alone share a meal), but I love a good "what's for dinner" post. Carry on, culinary divas!!

    Well, I kinda used this recipe as the basis, but modified it with my own touches:  https://tastykitchen.com/recipes/main-courses/pot-pie/?print=1/#size3x5

    It's the Pioneer Woman's recipe from her blog. I only made the filling, using a rotisserie chicken, and instead of the turmeric (turns out I didnt have any) and fresh thyme, I just used poultry seasoning, and heavy whipping cream (which I had for a different recipe), but about twice what the recipe calls for.

    The biscuits are simply the recipe on the side of the Bisquick box. I always make the drop biscuits. SO easy and so good.

  • I made homemade mac and cheese, smothered pork-chops, broccoli and cauliflower, with a apple cobbler in the oven as I type I was SUPER excited to have energy and a feel good day!

  • I made chilli!  I cooked the meat, and put it in a crockpot. Everything else was already cut up from the frozen section, add in the canned tomatoes.  Throw in a packet of seasoning and tada! 

    I'm never telling my husband how easy it is.  He loves it, and when he's home I'll actually take the vegetables and cut them up myself and pretend like it's a huge process, but if he's working it's frozen everything and he has no idea...

    I had intentions of making either stew or chili tonight. I even spent all morning finding a recipe and grocery shopping....now i'm not sure it will ever get done!

  • Ditto to the wanting sushi! We move on Sunday, so my dinners this week will be affectionaly referred to as "Chest Freezer Foraging". Tonight will probably be tator tots + something.
  • I made homemade spaghetti sauce French bread salad and green beans I have to make green beans every night cause my youngest doesn't eat "bunny food"
  • I'm making 4 ingredient mini chicken pot pies tonight.

    You make them and bake them in muffin tins.  I haven't made this particular recipe before, so I'm hoping it turns out.  Very simple.

    It was SUPER simple. Dinner was seriously ready in under an hour. You should try it! :)
