So for supper tonight, I made a variation on chicken pot pie - I made the filling, then made biscuits and served the filling open-faced over a split biscuit. I quite honestly believe that it's the best chicken "pot pie" I've ever had. Even my 2 year old, who's been on a hunger strike and even when he does eat, has suddenly become a vegetarian, ate the hell out of his portion. I'm no slouch in the kitchen, but tonight I'm just so proud of myself that I wanted to share.
What'd y'all do for dinner tonight?
PS: I made sure to include "AW" in my title, so as to not alienate anyone that has limited to no skill in the kitchen, or anyone who's been having a hard time cooking supper regularly. You know, cause I'm not necessarily a "regular" poster and would hate to cause dramz.

I'm never telling my husband how easy it is. He loves it, and when he's home I'll actually take the vegetables and cut them up myself and pretend like it's a huge process, but if he's working it's frozen everything and he has no idea...
I had intentions of making either stew or chili tonight. I even spent all morning finding a recipe and grocery shopping....now i'm not sure it will ever get done!
