WFD?

It started raining here a few minutes ago, and a hot soup sounds soooo good right now. Plus, I am SO not up for making anything. I'm thinking I may get DH to pick up broccoli cheddar soup and a salad from The Corner Bakery on the way home. What are you guys doing for dinner?

    Pregnancy discovered at 12 weeks 12/2007 - D&C at 13 Weeks due to partial Ectopic pregnancy/Body rejecting pregnancy. Last Pregnancy - EDD August 2013 TTC Our first miracle baby.

  • Probably nothing... I went to 2 baby showers thrown for us by my husband's coworkers today, and stuffed myself silly on cake and snacks! I feel like if I eat anything it needs to be carrot sticks after all that :-P

  • I made blueberry chocolate chip pancakes tonight. Too lazy to make anything else. They were sooooooooo yummy and fluffy!

  • Crock pot oriental chicken, fried rice, dumplings and egg rolls.  Before you get too impressed, the dumplings and egg rolls are from the freezer.

  • Meatloaf, steamed broccoli and baked potatoes.  I may even (finally) have a glass of the champagne big brother gifted us in celebration of our outside baby :)  Though, alcohol has not even been on my radar now that I'm actually allowed to partake.

  • I made a 13 bean soup....big pot of it because I plan to freeze the rest for after baby.
  • Curing my dairy craving with a cheesy chicken pasta dish and mint chocolate chip ice cream. Really blowing the low dairy low fat low cholesterol regimen I've been following for my gall bladder :)

    Oooo, what brand?
    It's the Barilla Plus. It comes in a yellow box. It has extra fiber and protein in it. I've had it 3 or 4 times now and my numbers have been great and I'm eating about as much pasta as I normally would.

  • Chicken enchiladas. I don't have the energy to try to cook right now; thankfully my step-mom is amazing and dropped them off for us.
  • Salad and carnitas. Boring , but with GD it's usually salad a some protein so my numbers don't spike. Wahhhh wahhhhh.

  • I made broccoli rice casserole with chicken in the crockpot. Turned out pretty good!!

    Crock Pot Chicken Broccoli Rice Casserole

    INGREDIENTS:

    • 2 cups brown rice - I used Wild Rice this time because that's all I had :)
    • 1 quart  chicken broth
    • 1 onion, finely diced
    • 3-4 chicken breasts
    • 1 teaspoon kosher or sea salt
    • 1 teaspoon Italian seasoning
    • 1/4 teaspoon pepper
    • 1 teaspoon garlic powder - I also added a teaspoon of fresh because, (in my best NYC accent) You gotta have the garlic
    • 1 cup light sour cream
    • 2 cups sharp shredded cheddar cheese
    • 2 cups frozen (12 to 14 oz) or fresh broccoli florets

    DIRECTIONS:

    1. Spray crock pot with cooking spray.
    2. Pour in rice and chicken broth and onion.
    3. Lay chicken breasts on top. Sprinkle  with salt, pepper, Italian seasoning and garlic powder.
    4. Cover and cook on high for 4 to  6 hours or until chicken breasts are cooked.
    5. During last hour, remove chicken breasts and cut into bite-sized pieces. Add chicken back to crock as well as sour cream and cheddar cheese. Stir together and place broccoli on top.
    6. Cover and cook an additional thirty minutes to an hour until most of the liquid is absorbed, broccoli is tender and rice is done. It will further thicken as it is removed from the heat.
    7. Cool leftovers and freeze in individual or family size servings (Great for when LO arrives!)

    This sounds great! I think I'll make it this weekend and freeze for when my squishy is here!
  • Last night was grilled venicin, pasta and baked potato (husband cooked if you couldn't tell).

    Not that tonight is any better but we are having lassagna and garlic bread.
