  • I am by no means a baker or an expert on this, but I did use fondant to make my moms birthday cake this year. Dh's cousin does quite a few cakes and told me to get duff goldmans buttercream fondant, which is ready to use. It's actually pretty easy to work with after conditioning (when compared to some), and it tasted pretty good (considering I hate the way any fondant tastes!). I bought a small tub at Walmart and it was enough to do the cake. We were on a time crunch since it was a last minute thing, but I was actually impressed with it! So that's just a thought. Here's the cake I made once it was done, so you can see the fondant... Nothing amazing, but pretty good all things considered (and considering this is NOT my thing!).

  • I'm def not a baker but I've been thinking about taking some classes to try to learn. Our bakery in town has some, maybe you could check with yours too? Good luck with the cake :) At least he's so little he won't know any different if you mess up :)

  • If you can roll out a pie crust you can work with fondant...  Think pie crust crossed with play dough for how to work with it...  Depending on where you're at it's hard to give you a direction to go for classes.  If you can link up with your local ICES chapter that also helps.  ICES (International Cake Exploration Societe') is one of the best linkages you can make for baking and decorating. 

    IMO, you can make marshmallow fondant, or you can purchase it ready to go.  While I'm not a fan of the flavor of Duff's fondant, it is FAR FAR FAR better than the "W" brand and also far easier to work with from my experience.  My favorite brand of fondant all around still remains Albert Uster Imports (www.auiswiss.com).  The flavor is neutral so it takes on whatever flavor you're using in your icing, the texture isn't as obnoxious as some brands of fondant, and it's very forgiving.

    When it comes to food coloring, AmeriColor is the brand to go with.  The colors are the edible version of the pigment colors for Behr paint so if you need to color match, all you need to do is get the printout from Home Depot...

  • Just because you coat it with fondant doesn't mean you get extra time...  The morning of the event is the best time to do the fondant work, but the underlayment you can do the night before and chill it in the fridge to make rolling the fondant onto it easier when the icing is chilled...

    MMF recipe...  Easiest way to do it is put the dough hook on the Kitchen Aid, add the sifterd powdered sugar...  melt the marshmallows like you're making rice krispie treats...  Stir them up really good once heated and put them into the KA...  At this point if you've got a "base" color of food coloring, add it...  Also, add something like a Raspberry/Cherry/Strawberry flavoring (people are used to chewing these flavors)...  Then let the mixer do all the work from here until it's workable and not sticky...You don't want too much and you don't want too little powdered sugar in it...
