I'm starting to think about ways to make it easier for myself when I stay home after our 2nd DD is born and was wondering if anyone had some suggestions for easy and healthy toddler friendly meals that I could make for lunches and/or dinners?
I boil star noodles and then put a variety of sauces with them - alfredo, marinara w/meat, or whatever - and freeze them in individual servings along with a handful of veggies (frozen peas, carrots, whatever). DD has an easier time getting the star noodles onto her spoon than other kinds.
I buy Morningstar veggie burgers, which are frozen, and microwave them. DD likes them. I serve with whatever fruit/veggies I have.
I make a big batch of fruit oatmeal (I use the My Favorite Oatmeal recipe from Annabel Karmel) and freeze it in individual containers along with fruit (cut up strawberries, usually).
DD likes whole grain Eggo waffles, which are an easy breakfast along with fruit. You can also scramble eggs and freeze them in portions. For DH, I make breakfast wraps (southwestern eggs, cheese, sausage in a tortilla) and freeze them.
DD loves hummus, and I serve it with veggie and pita dippers. She also likes quesadillas. HTH!

One I recently found that is really easy and really good for DS is a tuna melt. I make a grilled cheese with shredded sharp cheddar and put tuna in the middle of it. DS loves it.
On sunday, I make a large batch of soup. We have it that day, and then eat it throughout the week, mixed in with other items. I make chili, chicken veggi, corn chowder, potato leek, italian wedding,?asparagus, ?mushroom, split pea etc. Dd loves them all. I freeze them in varying portion size, from baby, single serving, to dinner for 3. ?

I make a batch of blue berry and banana pancakes to store in the fridge for 2-3 days. They are great for breakfast and lunch.
