TTC After a Loss

Who roasts their own pumpkin seeds?

I'm still not 100% sure if I'm going to give out candy tonight or not. We don't get a ton of kids and we usually end up having so much left over candy that we eat it all ourselves couple that with my insane dog, I'm not sure it's a good idea.

Anyway, I know some of you guys roast pumpkin seeds! How do you do this? I might head out and buy a pumpkin and attempt to do it!!

Any recipes that you love?

Re: Who roasts their own pumpkin seeds?

  • Me!!! Mine have been soaking in salt water overnight. I try different recipes each year but I think this year I'm sticking with the classic plain salted variety. Full of fiber, which I need on the IF meds right now.

@katib77 is soaking them in salt water necessary? Why do you do that???

  • I roast my own as well. I wont be doing any this year sadly. I lay mine out to dry over night then do a savory and sweet variety. I mix Worcestershire with some other spices and bake those, then I co a cinnamon and sugar one as well. The Worcestershire ones always seem to be a big hit. Crazily enough, I dont eat them but I love roasting them.

@megrae12 to get the pumpkin goo off you just rinse them really well?

  • I've never boiled or soaked mine. Just clean them off really well spread them on a sheet with olive oil and sprinkle sea salt. We also like ours with seasoning salt. Lowries was very popular in my house growing up. Then bake them low and slow. Mix them a couple times so they don't' stick. But they are easy and so good. I love them!!

  • Rinse in cold water, use olive oil to coat, sprinkle with salt then place them in a single layer on a cookie sheet. bake at 325 for 45 minutes, but turn them halfway through. Enjoy!

I should have mentioned that. It's important they are dried off well so the oil doesn't burn. Now I'm craving these! I want some so bad. I make them each Halloween.

  • I did it for the first time this year! The cleaning was the most tedious part of the whole process. Then, I used this recipe:

    https://www.wholeliving.com/130731/spiced-pumpkin-seeds

DELICIOUS. Sweet and spicy and mine stuck together (I probably should have cooked a little longer). I'm glad we have 2 pumpkins to carve tonight because I need more!

  • I tried for the first time last year.  I must have done something wrong, they didn't come right.

I cleaned and dried them.  I didn't soak.

I did one plain batch and one with cinnamon and sugar.  I like pumpkin seeds and these did not taste right.  I will try again one day.

  • YES!!!  Yum.  Rinse & pat dry.  Lay them out for a while to dry off then a little oil & sprinkle some seasoning on (seasoned salt, regular salt, old bay, etc.).  Then bake for 30-40 minutes mixing/flipping them every 10ish.  We've bought at least 4 pumpkins so far this year to do this. DH LOVES them.

  • For those of you who say buy a pumpkin and carve it, eat the seeds and make pumpkin puree out of the guts, do not use a carving pumpkin for the guts. The smaller, tiny ones are for the pumpkin puree. I tried asking DH about eating a pumpkin we carved and he says it doesn't taste right and you really need the small pumpkins for that.
