Any good 1/2 and 1/2 subs?

I want to make this potato/kale/sausage soup from the Pioneer Woman, but it calls for milk and 1/2 and 1/2. Regular milk I can sub soy or almond, but any suggestions for the 1/2 and 1/2? Is there anything good out there, or is this one of those recpies I should skip or just not feed the kids?

Coconut milk? The kind in the can. Not sure if it will work but its worth a shot. I've seen it used in place of evaporated milk in many recipes

Whenever a recipe calls for cream I usually sub low fat milk just to lighten it up anyways.  I would just do all almond/soy milk.
