I need breakfast ideas

Besides putting things on toast (peanut butter, cream cheese, etc) and making scrambled eggs, I'm at a loss. I used to throw yogurt and oatmeal in there but he's being finicky about spoon-fed things. What do you do for breakfasts?

  • How about a quiche or frittata? I make a zucchini quiche. It is easy to make a delicious. You can make it as a side for dinner and have leftovers for any meal the next day.

  • Pancakes, waffles, scrambled eggs and grits, oatmeal, quiche, french toast, yogurt, muffins.  We always have some kind of fruit with the item.

  • We make crock pot breakfast lasagna pretty often - its so easy and soo delicious. Just put it together the night before, heat on low all night (we go from about 10:00pm - 7:00am) and then wake up and enjoy the next morning!
    • One package hash browns - I get the refrigerated package of plain or southwest (I believe Ore Ida brand)
    • One Ham Steak - diced in to small cubes
    • 6 Eggs
    • Splash of Milk
    • One Package Shredded Cheddar Cheese
    Beat the eggs with a splash of milk in a bowl and set aside (we add salt/pepper too).
    Grease the crock pot.
    Put a layer of hash browns, then sprinkle a layer of diced ham, then a layer of cheese (be sure to set aside a small amount to top off casserole). Repeat layers 2 more times.
    Pour the eggs over entire casserole. Sprinkle with remaining cheese.
    Cover and turn crock pot on low and cook for 8 - 10 hours overnight. Enjoy the next morning!

  • My LO never eats much at breakfast...I usually give her some cheerios and raisins or blueberries on her high chair tray for her to nibble on.

  • Greek yogurt pancakes. Every day. 6oz Greek yogurt 1 egg 1/2c flour 1tsp baking soda I make 4 batches at a time (add a splash of milk) and freeze them. Reheat in the microwave for 10ish seconds, then a light toast and they're as good as fresh.
     

    Love this idea!  Both kids are allergic to eggs.  Do you use flavor greek yogurt?
