Healthier Pancakes or Breakfasts?

So...Henry loves pancakes, and sometimes that's all we can get him to eat for breakfast. I was wondering if there was a way to sneak something healthful in there -- fruits or even veggies (I love savory breakfasts but could also give them to Henry as snacks or lunch). I've made pumpkin and blueberry pancakes but am looking for some variety. Got any ideas? Also, can you freeze already-made pancakes? 

 What about muffins? Breakfasts are challenging around here because I'm usually still a zombie when Henry is ready to eat, so Cheerios and bananas has been our go-to...and I think Henry is tiring of it.

  • You could try oatmeal, eggs, yogurt, baby French toast sticks, rice chex. We usually have one or two of these with some diced peaches or strawberries.

    I mixed sweet potatoes or squash or spinach purée in with the pancake mix.

    I would make I big batch freeze them the microwave or toss in the toaster oven.

  • I purée up sweet potatoes and mix it with pancake mix or I add whole blueberries or cut up strawberries to them. If I don't do that I just make sure I give them fruit with their breakfast

  • Awesome suggestions! Yea, for some reason Henry doesn't like eggs. He's so weird. And it sucks because eggs are super convenient, fast to make, and healthful.

    I make and freeze: banana muffins, blueberry muffins, banana oatmeal "cookies", pumpkin pancakes, blueberry pancakes, etc. I make my own pancake mix and just add stuff to it.

     
  • Yeah you can definitely freeze already made pancakes..my mom used to make a big batch on the weekends and then freeze the extras for the week. My go -to for breakfast has been yogurt, it's one of the few things I can get my LO to eat! She seems OK with it. 




  • The only way she will eat her eggs is omelet style I mix in some peppers, turkey sausage and cheese. She loves turkey sausage so I buy the frozen small patties and heat them up in the microwave maybe 3x a week. I try to alternate between omelets, sausage & mini pancakes (plain, pumpkin or blueberry), yogurt, and she always has fruit.
