I'd been constantly scrambling for what I could quickly make DD once lunch or especially dinner rolled around if I didn't have any fruits or veggies prepped and sitting in the fridge already. I started looking up the best way to freeze finger foods, and I know flash freezing them is an option too, but I tried this way and it works great!
https://gallagherfam.blogspot.com/2010/03/finger-foods-make-ahead-of-time-and.htmlBasically you put the diced pieces into an ice cube tray and then fill the cubes with water, so you're freezing the pieces into an ice cube. Then thaw, heat and serve. I've done it with zucchini, sweet potatoes, squash and peas so far. I like it because they don't all clump together and I can just grab one cube of 2 or 3 different things, just like I did with purees. I heat them in the microwave and the water makes sure the pieces are nice and soft.
This may be old news but thought I'd share it anyway!
