Can you replace ricotta with cottage cheese in a recipe?

  • I voted yes because I've heard some people do that in something like lasagna but I've never actually tried it myself so....there's that.

  • SS Depends on the recipe. Ricotta pancakes would not be the same with cottage cheese.
    For example, butternut squash stuffed shells. I used to think it was so gross when my mom used cottage cheese in lasagna but I couldn't find ricotta at the store, so I got some cottage cheese. :/ I hope MH doesn't notice.

  • Dammit, @Mabelshesthebomb! I should have asked you first. I already made them and I feel like there are noticeable curds in my shells. MH isn't nearly as observant as me, so maybe he won't notice.

  • I always use cottage cheese instead of ricotta. I hate the texture of ricotta. I otherwise don't like cottage cheese but I love it in my lasagna and stuffed shells.

  • cottage cheese is the bomb and should be eaten in all the things. Are you making like a lasagna type deal? the answer would be yes, yum! Also this sounds gross but you could blend it if you need it to be smoother like ricotta.

    I use cottage cheese sometimes in lasagna but blend it first. MIL makes lasagna this way, and DH actually prefers it with cottage cheese, and he thinks ricotta is gross.

    Also, this wasn't asked, but I substitute plain Greek yogurt for sour cream almost always, and sometimes half Greek yogurt and half cream cheese in recipes that call for cream cheese (like creamy dips or icing).

  • Here are my shells. You can see the curds :( Those are sage leaves in a brown butter sauce on top, so hopefully they'll mask the old ladiness.

    I hate pasta with a passion but it's MH's favorite. I had a sandwich with Duke's mayo on it.

  • NO. I hate when people replace ricotta with cottage cheese. The texture is different and so is the flavor. I like cottage cheese, but it is not a replace for ricotta.

  • How do you hate pasta? I'm disturbed by this and will keep you in my prayers.
    I was vegan for 7 years and it was before it became easy to find a lot of replacements in the store, so I ate pasta all the freaking time. I think I have PTSD from it or something.
  • NO. I hate when people replace ricotta with cottage cheese. The texture is different and so is the flavor. I like cottage cheese, but it is not a replace for ricotta.
    Why is ricotta so hard to find then? I was in Sprout's (kind of like a Whole Foods but cheaper) and they have a bazillion kinds of cheeses and no ricotta.
  • And I spent $2 more on the shells because I didn't want to buy Barilla brand. Dicks.
